Coffee is much more than just a daily ritual
It is a complex beverage rich in bioactive compounds that influence aroma, flavor, and health. Scientific studies show that the altitude at which coffee grows strongly affects its chemical composition: for example, at higher elevations, coffee beans tend to develop more fatty acids and aldehydes (which contribute sweet, caramel-like aromas), while compounds like pyrazines and certain chlorogenic acids (which impart nutty or roasted notes) decrease.
The degree of roasting plays a critical role
Lighter roast coffees preserve more antioxidant activity, showing greater capacity in scavenging free radicals in assays such as DPPH and FRAP, compared to darker roasts. Moreover, post-harvest processing methods like fermentation, especially newer approaches such as self-induced anaerobic fermentation (SIAF) are under research for their ability to enhance antioxidant content in coffee while potentially reducing unwanted bitterness without sacrificing health properties.
